Favorite recipes are welcome; but, the main idea is to help others consider either easier meals or meals that are more interesting to one. I want ideas for when I am alone.
Twenty minute Salmon pasta
Feeds two hearty eaters. Half recipe can feed one.
Drain a tin of your favorite canned salmon. Peel a medium onion. Boil water in pot for pasta. Bring an approximately 10 - 12 inch frying pan to medium heat. Add 2 -3 tablespoons of oil and allow to heat Slice a peeled medium onion in half. Slice each half roughly 1/8 inches wide and soften in pan. Slice 2 -3 green onions about 1/4 inches wide and add to pan. Stir occassionally avoiding too much browning of the onion. Lower temperature to medium-low. Add the pasta to the boiling water. Break spagettini or spagetti into two or three lengths. Dice or break up half a dozen medium mushrooms into roughly fingernail size pieces. Add to pan. Break up the drained salmon and add to pan. Stir occassionally. Pour the jar of alfredo sauce over the contents of the pan and stir. Add parsley and stir. When the pasta is done pour into caulder and drain well. Divide the pasta into serving bowls or plates. Add some parmesan cheese on top of pasta (optional) Ladel the salmon sauce onto the pasta encouraging some mixing as desired. Serve and eat quickly. Cheese sauces cool fast.
Ingredients: 1 tin salmon 2-3 stalks green onions 1 medium onion 1/2 dozen medium mushrooms 1 jar alfredo sauce 1 tablespoon dried parsley 2 wristfuls of spagetinni pasta (adjust to requirements)
Ready inside 20 minutes. Can use 1/2 portions. No salt. Guaranteed tasty. Can mix sauce and pasta after cooked, stir, and serve pasta more evenly covered especially if using a side dish. Can add small brocholli pieces after adding the onion into the pan. Wide open to flavoring . Can use Tuna or Shrimp or diced sausage, leftover chicken, whatever. Can also use fancy mushrooms though not Portobello (colors).
You can also vary and divide. I might heat that up without the salmon. Spoon half into a bowl for refrigeration and then add the salmon. The other half I might heat up with a touch of cream to bring the sauce back, add some ground pepper, and pour over the chicken or pork chops I'm doing within a couple of days.
