Help....What can I substitute for Rum in my Bacardi Rum Cake recipe? We live in a dry (no alcohol sold) county and I see no way to make a trip out of county. I thought about Rum flavoring but what would I add it to...milk, grape juice, or what?????? I really hate to give up my favorite cake for Christmas. Not a biggie problem today but some of you good cooks might know.
And where am I going to get the bourbon, briegull? Maybe that fake champagne they sell at the grocery store. I knew Chef phranque would have a suggestion. We can't even buy beer in this county. We have Wet/Dry elections every few years but we, Baptist always vote no. Rumor has it that they can be seen parked at the liquor store in the next county.
Phranque you need to run for Mayor or whatever it is to fix that CountY! Don't you have anything stashed away somewhere??? We could overnight you some!!!! Oh and breath mints for Phranque.
(well, I thought you might have a few old bottles stashed in a cupboard somewhere. I have some stuff that's been there for 10 years or more!! ) My town (in NEW ENGLAND!) is dry, too, although I think a restaurant has a wine license. But drive half a mile away and you can get anything. Yes, fake wine is probably better than o.j. Do they have hard cider, even?
Bama, I make rum cake all the time. We also live in a dry county - have to drive 50 miles to get it! Anyway, if you have rum flavoring, just add about a teaspoon to the wet/dry ingredients when mixing. It won't be as good, but it will suffice!
Hi Bama: that is also one of the cakes that I make for the Holiday.. I can't think of a subsitute.. It's a Rum cake.. and it needs the Rum...anyway you can have someone bring you a bottle...or get one delivered, somehow...Do they have Rum flavor, I have never used one...I use Almond, and Anise Flavors for my cookies. Send me your address and I will mail you a bottle!!!

Open house was wonderful! Just finished getting things cleaned up. Had 30 people come. A good time was had by all. DH did extremely well. And since it was from 2:00 to 4:30, it wasn't too tiring for DH. He is now in bed watching TV. I was proud of him today. But I did get tired of people saying " Oh, I just don't think anything is wrong with him!"

With half of cup of rum in the batter and another half cup in the glaze that's going to be a lot of rum extract. Weejun, I am going to let you do the math. One story I like to remember, my mother was anti alcohol in any form. I took her a large piece of my cake and told her it was soaked in a little wine. The next time I was there she was bragging on how moist and good the cake was. My younger sister had baked her a pound cake and she was complaining how dry it was in comparison. She wouldn't let my dad have any of it. My conscience kinda hurt a little bit because I knew she would never have eaten it if she knew about the rum. I'm not only rotten, I'm dishonest also. Oh, well, we can't all be perfect.
Bama...make your own rum...Take a gallon of molasses, add 1/2 lb of yeast, and four quarts of distilled water. Borrow someone's still, and distill it until it is a clear liquid. Bottle it and wait until next year....
ya'll are so funny..thanks for the vision of what it would take to get that rum going!! woweeee.. in a forest with a kettle over a fire? no maybe that was what they called 'rot gut whiskey'.. we too live in dry territory but the wet line is near our farm..and I can assure you that many of those of various 'alcohol avoidance faiths'..are occasionally seen 'shopping' for 'groceries' at a store FOUR miles from town!!
I made a rum cake one Christmas. My first husband and I didn't drink much. He kept sending our little son into the kitchen to bring him more cake. I had already gone to bed. The next morning dh was so sick, and I couldn't figure out why. When I learned what had happened, I realized he had a hangover. That frosting had a lot of rum in it.
I felt so guilty. I made rum balls one year. They are not baked so the rum remains. As the dough got harder I kept adding more rum to the mixture. Got better and better. I gave some to my favorite auto mechanic who loved them. What I didn't know is that he was a recovering alcoholic. Probably set him back a few months.
