    The coconut oil discussion topic is five (5) pages long now, and there are a lot of us ready and willing to use coconut oil in various recipes! If those inventive souls out there will please share, I, for one, will be very grateful!

    sausage, cheese omelet
    use non stick pan-
    2tablespoons coconut oil heated
    chopped green pepper
    &saute in oil til tender

    add jimmy dean sausage(amount you like) and fry til browned

    add 2-3 eggs whisked
    salt pepper to taste

    add grated cheese and
    fold over in half when egg is firm

    garnish with black olive and more cheese
    serve with toast-and hot salsa if you like

    I'm embarrassed to tell you my "pasta recipe" but it really was good. Noodle Roni Fettucine requires 2 TBSNs of butter, margarine, oil, whatever, so I used the coconut oil (which by the way, looks like Crisco) and he loved it. Thank goodness, I only used 1 TBSP. But today he's fine, no nausea or anything, and he's just full of energy.

    In the morning I use 1 TBSP of coconut oil divided between the 2 halves of a toasted English Muffin. It melts in like butter. DW eats it that way, not adding any jam or marmalade, and says she likes it.

    In the evening I mix 1 TBSP of coconut oil in a small dish of apple sauce. She takes that down with no problem.

    I'm not sure I see any major change as yet, but we have only been at full dose for 2 days. I don't see any side effects.

    Chris, you are a gourmet chef after my own heart. Yours is one recipe I'm very likely to try!

    My recipe (which my husband adores, and I think is pretty tasty):

    Swiss Miss Hot Cocoa mix (I like the no-sugar-added best), prepared according to instructions, with 2 tsp of coconut oil added before nuking. :-)

    You do have to keep stirring while sipping, to keep the coconut oil mixed in, but it tastes great. (I haven't tried a higher "dose" yet ... we're still ramping up, very slowly.)

    holysmokes, if you want to fatten up your spouse, heres a good one for lunch i just made DH! a montecristo peanut butter/jelly!
    wow was it delish! he gobbled itup and used his fingers to lick the jelly off the plate::))

    make reg peanut/jelly of choice using plain white bread.

    mix 2 eggs with small amount of creme. i use my cartoned sugarfree french vanilla coffee cremer from the milk section) it makes it taste heavenly!
    dip evenly sandwich on both sides into egg mixture and fry in melted butter and coconut oil .. fry til golden on both sides and sprinkle with powder sugar = i know, i know, diebetic coma for sure..haha
    sweet isnt the word but we all know AD loves sweet!
    he GOBBLED it so fast. i will be making him more of these. fattening, SUPER! but good. yep really good. haha. i had one too, oh gained a lb for sure- divvi

    divvi=I used to make montecristos for my kids-never dreamed of p&j, usually ham and cheese, or roast beef, swiss cheese and horseradish. Of course that was before coconut oil was invented.

    doneit, it was Elvis who adored his moms fried peanut butter and banana sandwiches. i thought i 'd try a take on it but turned out montecristo. anything inside the sandwich is a winner! divvi

    Being a member of the male race, I do not have the moxy to come up with too many good recipis, but I have come up with a good way to add it to my LO food without too much hassel. I use a rubber tipped droper on a little bottle that I can carry around in my LO's purse. We eat out about once a day and this way I can put a tsp or two on her hamburger, salads, chinese food, fried chicken, pizza, etc. I told her the bottle was vitemen s and she has not complained. she hates to take the big vitimen pills so I usually use the chewy kind but she often leaves them around the house. My IM DR read several articles and shggest I go for 7 tsps a day. Pouring in on food out of the bottle was not possible when eating out.

    Any other ways to add it with out being too conspicious??? bill

    My hb and kids loved fluffernutters - I don't. HB also loves pb and banana. I just like peanut butter and toast - old fashioned crunchy peanut butter is the only kind we like.

    Would I be correct to assume from all your hints that coconut oil could substitute for regular oil in most anything? and maybe as a spread for toast etc?

    janeb, we try to find recipes using the coconut oil any way our spouses will eat it! so anything goes that would have a decent taste with a coconut flavouring. waffles, french toast, pancakes, cakes or muffins -i do eggs or add to applesause and yougurts-vanilla pudding is good with it too -there have been quite a few new creations here that all work well. i was thinking frying battered shrimp in coconut would be very good too! best of luck! divvi
